If your cream is not turning into butter, the batch may simply need more time. Whipped cream is an expected stage. Continue processing until the mixture becomes grainy and separates into butter solids and buttermilk.

First, check the carton. Use pasteurized heavy cream or heavy whipping cream with at least 36% milkfat. Milk and half-and-half do not contain enough fat for reliable butter making. Freshness also matters because butter concentrates the cream’s flavor.

Next, check the batch size. Cream needs room to move, so never exceed the maximum line. A very small amount may also fail to interact properly with the paddle. Confirm that the IFOLO paddle, collar, glass jar, and motor head are assembled exactly as shown in the manual. Always turn off and unplug the unit before making adjustments.

Temperature can change processing time. Extremely cold cream may separate more slowly, while overly warm cream can produce soft, greasy butter. If separation has already occurred but the butter looks like tiny grains, strain the liquid and press the grains together in ice-cold water.

Finally, wash the butter until the water stays mostly clear and press out trapped moisture. This improves texture and helps the finished butter remain fresher under refrigeration.
